Caramel Cupcakes

If I had to chose between cupcakes and cake, let me tell you, I'm DEFINITELY a cupcake girl! Sooooo I just had to make some nice little cupcakes for you guys (and my bellyyyy).
When they get out of the oven and you cut right through them, the caramel just oozes out of there, it's an absolutely satisfying thing to watch! However, you'll need to be careful and not do like me, orrrrr you'll burn your tongue real bad hahah LET THEM COOL DOWN A BIT! hahah
They are absolutely moist and and the caramel just really adds the perfect touch!

Ingredients
Caramel
1/2cup Granulated sugar
3tbsp Unsalted butter
1/4cup Cream (35%)
Pinch of salt
Cupcakes
1/4cup Butter (Softened)
1/2cup Granulated sugar
1tsp Lime juice
1 Egg
1 1/4cup All-Purpose flour
1 1/2tsp Baking powder
1/2tsp Salt
1cup Milk of choice
Directions
Caramel
-In a small saucepan, put the sugar on medium heat.
-DO NOT MIX.
-When the sugar starts melting AND browning, mix to melt evenly with a spatula.
-Once the melted sugar is a nice golden brown, add the butter whilst still mixing.
-As soon as the butter is well incorporated, add the cream.
-Now add a pinch of salt, and here's your super yummy caramel!
Cupcakes
-Preheat the oven at 350F.
-In a bowl, put the softened butter, the sugar and the lime juice.
-Whisk together until it's very fluffy then add the egg and whisk again to incorporate.
-Sift and whisk all the dry ingredients together (flour, baking powder, salt).
-Fold in the the dry ingredient mix in the wet mix, but DO NOT add it all at once, add it in three parts.
-Now whisk in the milk.
-With and ice-cream scoop, scoop the batter in cupcake liners.
If you don't want to add caramel in the middle, directly scoop them and put in the oven for 20 minutes, HOWEVER, if you're into that gooey greatness, follow the next step.
-Put about 1tbsp of caramel in each cupcakes, heat it up in the microwave if it's too thick.
-Make sure you can't see the caramel from the top, if you see it push it down into the batter.
-Now put in the oven for 20 minutes.
-Take them out and careful not to burn yourself with the caramel!
FYI,
-This recipe will give you 9 cupcakes, sooooo if your trying to cut sugar at least you don't have ten billion cupcakes to finish! haha
-It probably took me more than 10 batches of cupcakes to make the right cupcakes! I've said it before and I'll say it again, I'm definitely nottttt a baker hahah but im not sooo bad sooo I think you'll enjoy!
-For the topping I made a brown butter buttercream!
