Cauliflower Fried Rice/Couscous

It's usually called cauliflower rice, but it's really more like a couscous. I kept hearing about that from my trainer and many other people in the "healthy world" but I had never tried it, because I'm not the biggest fan of cauliflower. I finally made a recipe a month ago and now I'm hooked!
Now CAULIFLOWER is my fav veggie! Hahah
It's such a versatile vegetable, you can use it for couscous, for pizza, for steak, for fried chicken and the list goes on!
Now I always have some blended cauliflower in my refrigerator is always useful!
You can eat it with a lot of different proteins, first time I made it, I had grilled salmon and chimichurri sauce with it! But really anything is perfect with it's really like eating rice or couscous (whatever you want to call it haha)!

Ingredients
½ Cauliflower head
1cup Carrots
1 1/2cups Mushrooms
1cup Celery
1/2cup Peas
1 ½ tbsp Ginger
4 Garlic cloves
4tbsp Soy sauce
1tbsp Sriracha
1tbsp Lime juice
1tbsp Chili powder
10g Cilantro
1 Green Onion
Directions
-Cut the 1/2 cauliflower into florets.
-Wash and put in the food processor, blend until the cauliflower is as small as rice or couscous.
-Put it aside.
-Wash, peel, and dice the carrots (about 2 medium for 1 cup).
-Clean a chop the mushrooms.
-Wash and chop the celery.
-Pat the veggies aside.
-Finely chop the ginger, then do the same with the garlic.
-Finely chop the green onion.
-Roughly chop the cilantro.
-Heat up a big pan with some oil.
-Add the ginger and the garlic in the hot pan.
-Let them fry a little bit in the oil, and ice they start colouring, add the mushrooms.
-When the mushrooms are half cooked, add the carrots.
-Once you see the mushrooms are well cooked, add the celery and the peas.
-Mix well and let cook.
-When the carrots are slightly cooked, add the cauliflower and mix.
-Now add the soy sauce, the sriracha, the lime juice and the chili powder.
-Mix well.
-Close the heat.
-Add the cilantro and the green onion then mix.
-Put in a plate and EATTT!
Extra stuff!
I added some fresh diced tomatoes in the end on top to add more acidity and freshness to it!
I also put cilantro and green onions on top!
Also, mushrooms render a lot of water when they cook, so before adding the celery and peas, make sure that the water from the mushies has dried a little bit!
