Cheesy Squash Lasagna

This Recipe is just amazing! I love lasagna, and being on a "healthy journey", lasagna is something I totally stopped eating, but I found a way to eat it again!
This lasagna is sooooooo amazing, juicy, cheesy and crazyyy healthyyyyy, and honestly, I think it might even be tastier than actual lasagna.

What you need!
2 Butternut Squash
1/2cup Mushrooms (cooked)
1 Handful Spinach
8tbsp Ricotta cheese
1 1/2cup Grated cheese
Tomato sauce
-For the butternut squash, all you need to do is peel and slice thin with a mandolin or a sharp knife. Only use the top part without seeds.
-As for the mushroom and the spinach, you only need to sauté them with a pinch of salt.
-I'll put my recipe of tomato sauce, but if you want you can very well buy canned tomato sauce, it's up to you! (I promise you it'll be better with homemade sauce though haha)
-Don't forget to preheat your oven at 350F!

Ricotta cheese (4tbsp)
Sautéed mushrooms and spinach (half)

-I added dollops of ricotta and some basil on top but its up to you, I'm just obsessed with cheese haha.
-Put in the oven for 45 minutes, because it takes time for the squash to cook.
-Make sure the quash is tender before you take it out of the oven.
-The get ready to eattttttttt!
Tomato Sauce Recipe
Ingredients
1 Onion (medium)
8 Garlic cloves
1 Celery stick
½ Carrot
1 Can diced tomatoes (796ml)
20 mins reduce
10g Cilantro
8 Basil leaves
4tbsp Olive oil
Salt
Directions
-In a hot saucepan with olive oil, put the sliced onion, the crushed garlic and the sliced celery with a pinch of salt.
-Let them cook a little bit then add the sliced carrot.
-When the carrot starts cooking, add the diced tomatoes and the cilantro.
-Let it cook and reduce for about 20 minutes.
-Add the basil leaves then blend in a food processor and pass it through a strainer.
-Put back in the saucepan, and season with salt.
