Low Carbs Coconut Chicken Pad Thai
This plate is a combination of everything I LOVEEE; Squash. Chicken. Coconut. And a HUGEEE amount of veggies! It's basically a lower carb version of a Pad Thai, all I did is switch the noodles for spaghetti squash.
The combination of flavours in the recipe is just amazing! Yet another recipe that proves that healthy ISN'T boring. For my dear WW people this plate is what you need, it's light, flavourful and it's veryyyy low in points because it's basically only vegetables and chicken!
Anyways let's get going!
Basically, all that's gonna be needed for this recipe is chicken, squash and a bunch of veggies of your choice! For my veggies, I steamed some broccoli and sautéed peppers, corn and mushrooms. Plusss, I also added some fresh carrots and basil on top!
But let's start with the longest; The spaghetti squash!
What you need!
Spaghetti squash
Olive oil
Salt/Pepper
Directions
-Preheat the oven at 400F.
-Cut the spaghetti squash in half and take the seeds out.
-Put olive oil, salt and pepper on each halves (The inside part obviously haha).
-Put them on a baking pan cut-side down (so the inside part facing down).
-Now put it in the oven for 40 minutes.
-When the timer rings, just take it out, flip it and it's ready to be assembled!
While the squash is in the oven, marinate the chicken! And while your chicken is marinating, cook the veggies!
Ingredients
2 Chicken breasts
10g Cilantro (chopped)
2 Green onions (chopped)
10g Ginger (chopped)
1/4cup Coconut milk
2tbsp Olive oil
2tbsp Lime juice
1tbsp Soy Sauce
1tbsp Sambal Oelek
1/2tbsp Montreal steak spices
1/2tbsp Crushed chilli flakes
Directions
-Cut the chicken breast in thin slices
-Now put all of the ingredients over it.
-Let it marinate for at least 30 minutes.
-During that time prep your vegetables.
-In a hot Pan with oil, sauté the chicken (make sure you keep the excess marinade in the bowl)
-Once it's cooked, set it aside and put the excess marinate in the pan to reduce and make a sauce (About 5 minutes)
-Once it has the right consistency, add in the chicken and your veggies.
-Now it's done and ready to be assembled!
-Now all you've got to do is scrape the inside of the squash with a fork and you'll get your spaghetti!
-Then put the chicken/veggie mix on top!
-Now take your fork again and eatttt my friend!
Little XTRA Tips!
-You can let the chicken marinate for way more than a day! Like I always say; More time will give more flavour!
-Also, you can skip the part where you scrape the squash off the skin, and just put your chicken and veggie mix on the squash and use it as a bowl. (In the hole if that's clearer haha)
