Crispy Zucchini Fries



Are you a fan of zucchini, 'cause I'm not really hahah, HOWEVER, these are AMAZING!!


I was talking with a friend this week and she was telling me how her boyfriend doesn't really like veggies, and I thought to myself: Well I'm pretty much the same.


But, I then came to the realization that being "the type of person that doesn't like veggies" isn't actually a thing. I truly believe there's always a right way to cook an ingredient for you to fall in love with it!


When it comes to zucchini I really don't like them unless they're cut in very small pieces, I knowww I'm 23 years old but I sound like a child hahah. With this recipe though, I found myself being able to enjoy these beautiful big pieces of Zucchini. The fact that it's covered with parmesan cheese and Panko makes it amazing. You bite into the fry and the outside is crispy and cheesy and has that tang 'cause of the lemon zest, and the inside is very warm, fresh and just melts in your mouth!


It's to die for!

Zucchini lovers and zucchini haters,

This is for y'all!


Ingredients


3 Zucchinis

1/2 cup Cornstarch

2 cups Panko

1/2tbsp salt

10g Basil (chopped)

10g Parsley (chopped)

1 Lemon (zest)

1 cup Parmesan (grated)

4 Eggs

100ml eau


Directions


-Cut the zucchinis into fries.

-Put them on a rack and salt them.

-Leave them for about 20 minutes to take some moisture out of them then pat them dry.

-In the meantime, prepare three separate bowls: first bowl with the cornstarch, the second one with the eggs and water, and the last one with the remaining of the ingredients.

-Toss the zucchini in the first bowl (cornstarch) then the second (eggs) and and third bowl (Panko).

-Now put it back in bowl two, then bowl 3 again to finish.

-Repeat the two previous steps until all your zucchinis are coated.

-Cook in the air fryer at 400F for 10 minutes.

-Now, Zucchini lovers and haters, get ready for the best moment of your life: Tasting these beauties!!!!


I think it's ideal with a nice sauce on the side, you could simply go with ketchup, mayo, whatever floats your boat... or my amazing tomato sauce.


To make it quicker I used:


1 can Diced tomatoes

1 Red onion (small)

6 cloves Garlic

Olive oil

Basil (to taste)

Parmesan (to taste)

Dried oregano (to taste)


-Simply cook red onion in olive oil until translucent.

-Add the garlic and let it cook until its slightly starts to brown.

-Add the remaining ingredients starting with the tomatoes.

-Let it cook and reduce for 20 minutes.

-Blend and serve on the side!
