Grilled Cheese

Raise your hand if you agree with me; Grilled cheeses are sooo UNDERRATED! It's definitely one of the simplest things to do, a 5 year old could make them!
When I made them recently, it probably had been a few years since I had eaten one. It was definitely a pleasant surprise! I made them on a Monday and it's the only thing I ate at home until the next Monday haha!
Im not planning on telling you how to make a grilled cheese haha, you probably already know how to, however I can give you a few tips and tell you how I made mine!
Little tips on this heavenly food!
-In my grilled cheese, I added some Mornay sauce that I had. left over from my Mac and Cheese, so if you have some, you can add a layer of that inside the bread and put the cheese over it. It makes it extra creamy!
-Also, I used more than one type of cheese! (mozzarella and cheddar)
-Do not, and I repeat, DO NOT use the plastic cheese (I won't name a brand you already know what I'm referring to haha), you can do sooo much better with something like the already sliced cheese from a good affordable brand! (I used Petit Québec)
-Don't be impatient! Put the fire on medium heat not high haha. That way, your bread will have the time to heat up properly, and the cheese will also be able to melt before ur toast burns.
-When you cook the grilled cheese, don't press over it with the spatula, I'll just burn faster, and you won't get the awesome different textures in the bread! (Crispy outside and soft in the middle)
-Last but not least, you can try with different types of bread! I did half my grilled cheeses with sourdough bread, it gets crispier so to my taste it was amazing! However a grilled cheese with some sliced bread is also very gooooddd!
Hope everyone enjoys and remembers to try a grilled cheese even if you're not 5 years old anymore, cause I'm telling you, they are definitely underrated haha you won't regret!
Here's my Mornay sauce recipe if you're thinking of adding some spice and creaminess in there!
Ingredients
Haitian Spices (everything blended together)
2 Garlic cloves
1 Green onion
1/2 Scotch bonnet pepper (optional)
1 Celery stick
10g Cilantro
1/2cup Olive oil
Mornay Sauce
50g Butter
2tbs Haitian spices
30g Flour
1tsp Dried chili flakes (optional)
1tsp Chili powder
2tsp Powdered chicken stock
5cups Milk
1cup Grated cheese
Directions
-In a put, put the butter and let it melt.
-Cook the Haitian spice in the butter.
-As soon as the spices slightly start taking colour, add the flower and use a whisk to make sure everything is well homogenized.
-Now add the dried chili flakes, the chili powder and the powdered chicken stock.
-Continue mixing with the whisk for to homogenize.
-Start adding 1 cup of milk then whisk.
-Then add the second one and do the same.
-Now add the rest of the milk, and whisk until the sauce thickens.
-when it’s thick, close the fire under the pot and mix the cheese in.
