Haitian Mac And Cheese

If I have a cooking blog, I for sure need to talk about my Mac and Cheese! I've been doing it since I was 10 years old, it's one of the first recipes my mother taught me how to do and I eventually learned to do it my way! This recipe is extra creamy, gooey, flavourful and SPICYYY! If you're into spicy foods, that's definitely for you, and if you're not, you just need to not put some of the ingredients, and its also gonna definitely be for you!

What you need!
500g Rigatoni
Haitian spices
Mornay sauce
Cheese
Ingredients
Haitian Spices
2 Garlic cloves
1 Green onion
1/2 Scotch bonnet pepper (optional)
1 Celery stick
10g Cilantro
1/2cup Olive oil
Mornay Sauce
50g Butter
2tbsp Haitian spices
50g Flour
1tsp Dried chili flakes (optional)
2tsp Chili powder
2tsp Powdered chicken stock
5cups Milk
2cup Grated cheese
Directions
Rigatoni
-Make water boil in a large pot.
-Once it’s boiled, add salt oil and cook the rigatoni in it. (12mins)
-when it’s done, strain it and pour cold water over it.
-Put it aside in a bowl with about 1tbs of oil.
Haitian spices
-In a food processor, put all the ingredients except the oil.
-Blend everything and start gradually adding the oil.
-Now you’ve got Haitian spices you can use in everythinggg!
Mornay Sauce
-In a pot, put the butter and let it melt.
-Cook the Haitian spice in the butter.
-As soon as the spices slightly start taking colour, add the dried chili flakes, the chili powder and the powdered chicken stock.
-Now add the flour and use a whisk to make sure everything is well homogenized.
-Continue mixing with the whisk until it's homogenized..
-Start adding 1 cup of milk then whisk.
-Then add the second one and whisk again.
-Now add the rest of the milk, and whisk until the sauce thickens.
-When it’s thick, turn off the heat under the pot and mix 1 cup ofthe cheese in.
Plating
-Preheat the oven at 350F.
-In a bowl, mix the rigatoni, the mornay sauce and the rest of the grated cheese (there might be more sauce than needed, so put the desired amount of sauce).
-Then put that mixture in 3 medium size ramekins or in a small baking pan.
-Put grated cheese over it, and when the oven is ready, put it in for 10 mins.
-When your cheese is well melted, change the oven on the broil setting and leave the mac and cheese in there for about 1 minute.
-Take it out treat yourself to this cheesy/creamy madness!
Little Tips!
-If you don't really tolerate spicy food, you don't need to put scotch bonnet in your spices, and also no need to put child flakes when making the sauce.
-However, If you're crazzyyy into spicy (like me), what I do is I put an entire scotch bonnet and I also add the seeds for my Haitian spices. (It's gonna be veryyy spicy though sooo if you like moderate spice just follow the recipe haha)
-If you feel like your mornay sauce is too thick, close the heat and just add more milk.
-And if you have some mornay sauce left over, u can keep it in your fridge.
-The Mac and cheese doesn't absolutely need to be put in the oven with cheese on top you can also just mix the rigatoni and mornay and eat it that way.
