Zesty Beets and Chickpeas Salad
It might come as a surprise, but I used to absolutely hate beets!
But then I realized all the health benefits they had, soooo I decided to try to find a way to like them and that recipe is it!
I honestly still cannot just eat a piece of beet and like it, but I could eat this salad all day long.
There's just sooo much flavour and for those who have seen my reel on instagram, There's TONNSSS of cilantro, and I meannnnn cilantro makes everything good!

Ingredients
750g Red beets (raw)
540ml Chickpeas (1 can)
2 Bell peppers (any colour)
1/2 Red onion
50g Cilantro (keep the stems)
1 Lemon (zested and juiced)
1tbsp Chicken stock powder
1tbsp Chili powder
1/4tbsp Sriracha
Salt/Pepper to taste
Directions
-Clean and cook the beets in a pot of water, takes about and hour and a half.
-Peel the beets and cut in bite size peices.
-Let them cool down in the refrigerator.
-In the meantime, rinse the chickpeas and add them to a big bowl.
-Then dice your bell peppers (same size as the beets). Now put it with the chickpeas.
-Dice half of the onion (a little smaller than the chickpeas). Also add to the bowl.
-Chop the cilantro and add with the other veggies.
-When the beets are cooled down, add to the bowl, then add all the remaining ingredients too.
-Don't forget to add salt and pepper!
-Enjoy now!
XTRA STUFF!
-What I normally do is I cook my beets a day in advance so I don't have to wait while they cook and cool down (I'm just not patient enough though haha).
-Also, I usually make double that recipe 'cause were a lot of people in the house, and it lasts for a week, so if you want to do a huge meal prep for a lot of people, I recommend doubling it!
-If you double it, for the bell peppers, only add 1 pepper, no need to double it to 4.
-And I also wrote that any bell peppers could be used, buttttttt we all know the red ones are the bestttt, sooo they're the ones I would recommend!
-One more thing, for the sriracha, I usually put double the amount I wrote down so it's safer for people who can't handle spicy food, but if you're the same as me, go ahead and put 1/2tbsp, it'll be perfect!
