Coconut And Curry Tofu Tacos


First recipe out in almost a year, and I'm glad to be back with something I rarely do! I used to have such a hard time cooking with tofu and being able to make it ACTUALLY taste like something... JUST ANYTHING! If I'm completely straight with you guys, my tofu has actually only started being good last year because of one extra simple thing.


MARINATING THE TOFU!

Can't believe it took me 5 years of being a cook to figure it out! hahah


This taco is not really your conventional taco, but if you love Thai flavours (or just good food), this one is for you!

Enough with the build up, let's get started with this yummy tofu recipe!


Ingredients


400g Extra firm tofu

2tbsp Olive oil

25g Red curry paste

100g Coconut cream

10g Cilantro

2tsp Curry powder

1tsp Turmeric

1tbsp Sambal Oelek

1/2tsp Salt


Directions


-Cut the tofu in big cubes.

-Blend all the other ingredients together and pour over the tofu.

-Mix well.

-Let it marinate overnight.

-Preheat the oven at 450F.

-Spread tofu on oiled baking sheet.

-Bake for 8-10 minutes.

-Use your tofu however you want to use it, but most importantly, ENJOY!


If your making tacos...


-Make sure to have a little sauce to add more of a kick. I made a cilantro coconut yogurt sauce. Pretty much self explanatory, I blended plain yogurt, coconut cream and cilantro until smooth.

-As for garnish, I used red onions, arugula and radish, but really it's all up to you!


XTRA STUFF!


-You can bake the tofu the day of, but it won't be as flavourful.

-Also, you can use the tofu to put on top of some rice with veggies, or in a pad Thai, or any noodles for that matter, just get creative!
