Spicy Lentil Salad


At my previous job, I had to make tonssssssss of salad, considering how much I love lentils, this was definitely one of my favs to make!


The cilantro, the cucumber, the radish and tomatoes make every bite feel sooooo fresh, it's really an amazing salad. If spicy food is not your cup of tea, just add a little less sriracha, either way, you will not be disappointed with the trip this salad will give to your taste buds!


Plus, if you don't have the time to cook, just make a batch on a Sunday and put whatever protein you like on the side! I went with a honey and orange salmon, it was AMAZING. You could also very well just eat it with nothing on the side because lentils are very filling.


Let's get started now!


Ingredients


1cup Green lentils

1/2 English cucumber

15 pieces Cherry tomato

5 pieces Radish

40g Cilantro

10 Mint leaves

2tbsp Lime juice

1/2tbsp Sriracha

1tsp Cumin powder

1tsp Chili powder

Salt/Pepper


Directions


-Put lentils in a pot with water.

-Put it on stovetop, once the water starts to boil, reduce the heat so it simply simmers.

-They should take about 25-35 minutes to cook once the water boils.

-Make sure to mix every now and then.

-When the lentils are cooked, remove from water and put on a tray so they can cool down faster.

-Dice the half cucumber and the radishes, put aside in a mixing bowl.

-Cut the cherry tomatoes in half, add to the cucumber and radish bowl.

-Roughly chop the cilantro and finely mince the mint, then add to the bowl.

-Now add the lime juice, sriracha, cumin, chili powder and the cooled down lentils to the bowl.

-Add salt and pepper to taste, then mix well.

-There you have it! A fresh and tasty lentil salad!


XTRA STUFF!


-Before cooking the lentils, don't forget to rinse them!

-Careful to not overcook them, because it's not sooo enjoyable in a salad haha.

-When you cool down the lentils, to accelerate the process, put them in the refrigerator.

-For the sriracha, I put a full tablespoon because I love it extra spicy, sooo if you're comfortable with a lottt of spice, I recommend this!
